    • Печенье обладает нежной рассыпчатой структурой и запоминающимся приятным сливочным вкусом.
    Дозировка смеси в рецептуре: 6% к массе теста

    Рецептура

    Мука в/с – 530 г

    Сахар-песок – 220 г

    Смесь “Альфа” – 75 г

    Маргарин столовый/молочный 82%* – 280 г

    Яйцо куриное/меланж – 150 г

    ИТОГО: 1255 г

    Технология приготовления
    замес теста
    Все ингредиенты по рецептуре внести в емкость миксера одновременно.
    Замешивать тесто 1 минуту на медленной скорости, затем на средней
    скорости в течение 6-8 минут.
    ПРИМЕЧАНИЕ:
    * Температура маргарина должна составлять 10-15 ̊С.
    формование
    Масса тестовой заготовки 10-20 грамм.
    Формование возможно:

    • на отсадочных машинах со струнной резкой;
    • вручную: тесто раскатать в пласт толщиной 0,5-1 см, далее нарезать с помощью вырубки для печенья необходимой конфигурации.

    Дополнительное декорирование:
    Поверхность тестовых заготовок можно дополнительно декорировать:

    • сахаром;
    • конфитюром/начинками и штрейзельной/песочной кошкой;
    • сахарными цветными посыпками;
    • дробленым орехом;
    • корицей;
    • шоколадными каплями.

    выпечка
    в ротационной печи:
    температура выпечки 175-180 ̊С, положение шиберной заслонки-закрытое. Продолжительность выпечки 8-12 минут, в зависимости от загрузки печи;
    в подовой печи:
    температура «низ» -180 ̊С, температура «верх» – 180 ̊С. Продолжительность выпечки 8-10 минут;
    в конвекционной печи:
    температура 175-180 ̊С, конвекция воздуха «средняя». Продолжительность выпечки 8-12 минут в зависимости от загрузки.
