    • Готовое изделие можно употреблять в пост, так как в его составе нет яйца и других молочных/животных компонентов. Изделие обладает плотной структурой с шоколадным вкусом и пряным оттенком.
    Дозировка смеси в рецептуре: 8,6% к массе теста

    Рецептура

    Мука пшеничная – 200 г
    Сахар-песок – 198 г
    Смесь «Бэллабрио Лайт» – 78 г
    Масло растительное* – 94 г
    Вода** – 164 г
    Какао-порошок – 30 г
    Смесь пряностей “Сухие духи” – 3 г
    Ароматизатор “Апельсин” – 2 г
    Орех грецкий – 54 г
    Цукаты апельсиновые – 85 г
    ИТОГО: 908 г
    Технология приготовления
    замес теста
    В емкость миксера вносят все компоненты (кроме цукатов и грецкого ореха), перемешивают лопаткой на средней скорости 7 минут до однородной консистенции. В конце замеса внести цукаты и измельченный грецкий орех, перемешать до равномерного распределения в объеме теста.
    ПРИМЕЧАНИЕ:
    *Рекомендуется рафинированное дезодорированное растительное масло.
    **Применяется обычная вода комнатной температуры.
    формование
    Масса тестовой заготовки от 400 грамм.
    Тесто рекомендуется разливать в прямоугольные металлические, силиконовые или бумажные формы.
    выпечка
    В ротационной печи:
    температура 170-175°С,
    положение «шиберной заслонки» – «закрытое»;
    Продолжительностьвыпечки от 40 минут, в зависимости от загрузки печи:
    В подовой печи:
    температура «низ» – 160°С, температура «верх» – 170°С. Продолжительность выпечки 45-50 минут;
    В конвекционной печи:
    температура 175С°, конвекция воздуха «минимум». Выпечка от 45 минут в зависимости от загрузки печи.

    Отделка
    Выпеченный полуфабрикат после полного остывания украсить сахарной помадкой “Айсберг” или обсыпать сахарной пудрой «Ваниль Эффект». Изделие подавать целиком или в нарезку.
    Срок реализации
    30 суток при хранении в герметичной упаковке.
    Для продления сроков реализации возможно внесение консервантов по общепринятой схеме.
