Технология приготовления
замес теста
Яйцо с сахаром взбить венчиком до пышной массы. Затем на медленной скорости внести предварительно растопленную шоколадную глазурь и растопленный маргарин. Далее внести муку и смесь «Атланта» и замешать до однородности в течение 2-3 минут.
формование
Из кондитерского мешка отсадить диск диаметром 20 см., начиная из центра и далее по спирали (масса тестовой заготовки 340 грамм).
выпечка
в ротационной печи: температура разогрева печи перед посадкой 210˚С, далее (после посадки в печь) снижается до 190˚С, положение шиберной заслонки – закрытое. Продолжительность выпечки 14-16 минут, в зависимости от загрузки печи;
в подовой печи: температура «низ» 190˚С, температура «верх» 190˚С. Продолжительность выпечки 14-15 минут;
в конвекционной печи: температура 190˚С, конвекция воздуха «минимум». Продолжительность выпечки 14-15 минут в зависимости от загрузки печи.
ВАЖНО: для обеспечения оптимальной структуры и мягкости в течение хранения нужно очень внимательно следить за продолжительностью выпечки (не превышать ее!) и температурой печи. Заготовки должны быть светлыми, до необходимого состояния они доходят уже на противне вне печи.
