    • Оригинальный кекс с нежной мраморной структурой, сочетающий в себе вкус шоколадного бисквита и апельсиновой ноты.
    Дозировка смеси в рецептуре: 6,4% к массе теста

    Рецептура

    1. Приготовление полуфабриката теста
    Мука в/с – 165 г
    Сахар-песок – 175 г
    Смесь «КайзерКейк» – 45 г
    Масло растительное* – 165 г
    Яйцо куриное/меланж -155 г
    Вода** – 45 г
    ИТОГО: 750 г
    Технология приготовления
    замес теста
    Все ингредиенты по рецептуре вносят в емкость миксера и перемешивают лопаткой на средней скорости 3-5 минут.
    Примерно 1/3 (250 г) теста смешать до однородности с суспензией какао, которая придаст тесту более выраженный шоколадный вкус.
    Оставшуюся часть теста (500 грамм) смешать до однородности с конфитюром*** (при необходимости, в тесто внести оранжевый краситель).
    ПРИМЕЧАНИЕ:
    *Рекомендуется рафинированное дезодорированное растительное масло.
    **Применяется обычная вода комнатной температуры.
    **Для данной рецептуры потребуется около 115 г конфитюра.
    ВАЖНО: Рекомендуется применять конфитюр только на пектине, с содержанием сухих веществ не менее 60%(возможно использование не термостабильного конфитюра).
    2.Приготовление шоколадной суспензии
    Какао-порошок – 15 г
    Вода – 30 г
    ИТОГО: 45
    Какао-порошок залить горячей водой (80-90°С), перемешать до однородного состояния и охладить.
    формование
    В форму для выпечки выложить оба теста в произвольном порядке так, чтобы получился мраморный эффект.

    Поверхность тестовой заготовки посыпать песочной крошкой, рекомендуется крошка*, изготовленная на смеси «Атланта»
    3.Приготовление крошки для декора на «Атланта»
    Мука в/с – 45 г
    Сахар-песок – 20 г
    Смесь «Атланта» – 5 г
    Маргарин столовый/молочный 82%** – 20 г
    ИТОГО: 90 г
    Все ингредиенты поместить в миксер и смешивать в течение 3-5 минут до получения массы крошки.
    ПРИМЕЧАНИЕ:
    *Расход крошки около 8% к массе тестовой заготовки.
    ** Маргарин должен быть охлажден до 10-12°С.
    ВАЖНО: Выпекать крошку не нужно.

    Продолжительность выпечки от 25 до 45 минут, в зависимости от загрузки печи и массы тестовой заготовки;
    в подовой печи:
    температура «низ» 160°С, температура «верх» 170-180°С. Продолжительность выпечки 25-40 минут, в зависимости от массы тестовой заготовки;
    в конвекционной печи:
    температура 170-185°С, конвекция воздуха «минимум».
    Продолжительность выпечки 25-40 минут в зависимости от загрузки печи и массы тестовых заготовок.
    Срок реализации
    3 недели/21 день при хранении в герметичной упаковке.
