    • Готовое изделие/полуфабрикат обладает традиционной структурой, цветом и вкусом, но имеет более высокую микробиологическую чистоту в сравнении с изделиями на сыром белке.
    Дозировка в рецептуре: 5,6% к массе теста

    Рецептура

    Смесь «Альбуквик» – 50 г
    Вода t 18-20 ̊ – 250 г
    Сахар-песок – 600 г
    ИТОГО: 900 г
    Взбивание белковой массы
    В отдельной емкости смесь «Альбуквик» с водой* перемешать венчиком и дать набухнуть в течение 20-30 минут при комнатной температуре.
    По истечении этого времени перенести в емкость миксера.
    Взбивать венчиком на высокой скорости 5 минут до образования пены, затем внести ½ сахара от количества по рецептуре, взбивать еще 5 минут. Добавить вторую часть сахара, взбивать еще 5 минут.
    ПРИМЕЧАНИЕ:
    *Применяется обычная вода из центральной системы питьевого водоснабжения (по СанПиН 2.1.4.1074-01).

    Продолжительность сушки не менее 1,5 часов в зависимости от загрузки и массы заготовок;
    в подовой печи:
    температура «низ» -80 ̊С, температура «верх» – 70 ̊С.
    Продолжительность сушки от 2 часов;
    в конвекционной печи*:
    температура 80-100 ̊С, конвекция воздуха
    «минимум». Продолжительность сушки не менее 1,5 часов в зависимости от загрузки.
