    • Мягкое печенье в американском стиле со вкусом какао, сохраняющее потребительские свойства в течение 90 суток.

    Мука в/с – 150 г

    Сахар-песок – 100 г

    Смесь “Атланта” – 40 г

    Патока – 30 г

    Глицерин пищевой – 5 г

    Жир специальный* – 60 г

    Какао-порошок – 25 г

    Яйцо куриное/меланж – 50 г

    Сироп инвертный – 60 г

    ИТОГО: 520 г

    Технология приготовления
    замес теста
    Все сырье в охлаждённом состоянии внести в емкость миксера одновременно. Замешивать тесто 1 минуту на медленной скорости, затем на средней скорости 2-3 минуты, в зависимости от массы теста.
    Готовое тесто должно быть мягким, пластичным и однородным.
    ПРИМЕЧАНИЕ:
    * Жир должен иметь температуру плавления порядка 36-29°С. Рабочая температура (для замеса теста) должна составлять 18-20 ̊С.
    ВАЖНО: в состав жира должны входить антиоксиданты.
    формование
    Масса тестовой заготовки 30 грамм*.
    Формование возможно на отсадочных машинах:

    • валкового типа с отсадкой через дюзы;
    • со струнной резкой;
    • с начинкой через шнековый или мультиэкструзионный дозатор;
    • с помощью отсадочного мешка.

    ВАЖНО: диаметр дюзы должен быть не менее 1 см;
    ПРИМЕЧАНИЕ:
    * рекомендуемая масса заготовки позволит готовому изделию лучше сохранить свои потребительские свойства при дальнейшем хранении.

      выпечка
      в ротационной печи:
      температура разогрева печи перед посадкой 200-210°С, далее (после посадки в печь) снижается до 185°С, положение шиберной заслонки-закрытое. Продолжительность выпечки от 9 до 11 минут в зависимости от загрузки.
      в конвекционной печи:
      температура 185°С, конвекция воздуха «средняя». Продолжительность выпечки 8-9 минут в зависимости от загрузки.
      ВАЖНО: не превышать продолжительность выпечки (заготовки на листе должны выглядеть слегка недопеченными- они «доходят» на противне, в течение последующего хранения печенье останется мягким.
