    • Готовый пончик (донат) имеет смешанную средне-мелкую пористость, приятный ванильный аромат и легкий сливочный вкус. Мякиш обладает мягкой, «кусающейся», короткой структурой.
    Дозировка смеси в рецептуре: 5% к массе муки

    Рецептура

    Мука в/с – 950 г
    Сахар-песок – 62 г
    Смесь «Донат Экспресс» – 50 г
    Сливочное масло/маргарин 82% – 210 г
    Вода t 20-22С° – 320-300 г
    Яйцо куриное*/меланж – 100 г
    Соль поваренная – 15 г
    Дрожжи прессованные 35-40 г
    ИТОГО: 1720-1750 г
    Технология приготовления
    Подготовка сырья
    Растопить масло/маргарин;
    Прессованные дрожжи измельчить до состояния мелкой крошки и вносить в тесто после внесения всего перечня сырья.
    замес теста
    В емкость тестомесильной машины со спиралью внести муку, соль, яйца, сахар, растопленное масло (или маргарин), смесь «Донат Экспресс» и 80-90% воды, положенной по рецептуре.
    Начать процесс замеса и внести подготовленные дрожжи. Месить 1,5-2 минуты на медленной скорости, после чего внести остаток воды и продолжать замес на быстрой скорости в течение 5-6 минут.

    ВАЖНО: Температура теста должна составлять 26 – 28 ̊С.

    ПРИМЕЧАНИЕ:
    *Яйцо /меланж – рекомендуется применять комнатной температуры.

    Отлежка
    Разделить тесто на куски 0,5-1,8 кг, округлить и дать отлежаться 15-20 минут.
    Формование
    Тесто раскатать в пласт толщиной ~1 см.
    Вырубкой сформировать тестовую заготовку: диаметр внешней вырубки 80 мм, диаметр внутренней вырубки 30-35 мм (можно использовать вырубку в форме шестиконечной звезды с округлыми вершинами).
    Расстойка
    Дать тестовым заготовкам расстояться при температуре 39-40 ̊С, влажности 80%, в течение 40-45 минут.

    ВАЖНО: после расстойки (перед обжаркой), заготовки необходимо обветрить в условиях цеха в течение 5-10 минут.
    Обжарка
    Температура жира 170-180 ̊С, продолжительность по 1-1,5 минуты с каждой стороны, в зависимости от массы заготовки.

    ВАЖНО: Цвет корочки должен быть светло-золотистым, не темным.

    Отделка:
    Обжаренные заготовки изделия после полного остывания можно покрывать сахарной помадкой «Айсберг» или нетающей сахарной пудрой «Сноустар».
    Хранение/Срок реализации
    5 суток при хранении в герметичной упаковке.
